 Green chutney-coriander-mint-chilli chutney

This green chutney is a delicious, nutritious and flavour packed. It is made from fresh herbs and spices. It is a perfect side dish for snacks and appetizers in sandwiches, chaat, bhel, vadapav, ragda patties, papdi chat, sevpuri, with farshan like bataka vada, samosa, muthiya, dhokla etc It is easy to make and can be stored in the freezer for a long time in an airtight glass container. one can also freeze in icetrays. later stored in ziplock bags. For best results, one needs to thaw the chutney in the refrigerator.

it can be made with or without garlic. Depending upon how much spicy one likes green chilli can be added. Gujarati always add sugar so in this chutney also sugar is added. but it is optional. Even if you are adding garlic, sugar should not be added. Coconut can be added too. Each ingredient will give a specific taste to the chutney. Except basic ingredients all are optional. Adding sugar may help in retaining the green colour. Adding curd may give a nice green colour and enhance the taste. It is generally used with paneer tikka.

Ingredients:

basic ingredients 

coriander leaves 2 cups cleaned, rinsed and drained leaves

mint leaves. Don't use mint stalk as it will make chutney bitter.1 cup cleaned, rinsed and drained leaves 

green chilli 2-3

curry leaves 1 stem-use leaves only

salt as needed

lemon -1 lemon juice

ginger 1 small piece peeled-1/2 inch

cumin seeds 1/2 teaspoon

coriander seeds 1/2 teaspoon

optional ingredients:

chat masala 1/2 teaspoon

garlic-fresh green or dried 2 cloves.if adding garlic, avoid adding sugar.

coconut (coconut is generally used in south Indian cuisine)

roasted peanut 2 tablespoon

roasted bengal gram-chana1 tablespoon

Methods:

Wash and clean corainder. Remove steam. Similarly, wash and clear mint leaves, pluck leaves. Remove top of green chilli. Clean and remove skin from ginger and garlic, plucked curry leaves. Put all these ingredients into mixer grinder. Add peanut, salt, sugar, peanut, roasted chana. Add little bit of water. Crush to make a smooth paste. Add lemon juice. It will retain fresh green colour of chutney. Check the consistency you need and adjust as needed by adding little bit of water.
