Mango is
the king of fruits. From skin to seed each part of this fruit is being used by
us. Today I am going to share sabji made from raw mango. It is sweet and sour
too. This is a very special delicacy. It is one of my favorites(if made by
mummy). It is made in summer only so sharing it in this season.
Ingredients to make 11/2 kg
Raw mango(1
kilo)-washed, peeled, cut into small pieces
Jaggery
750gm
Oil 2
teaspoonful
Cumin seeds 1 tsp
Red chilli
powder(Kashmiri mirchi) 3tsp
Dhanajeeru powder 3tsp
Salt as per taste
Turmeric
powder 2 tsp
Method:
1. Put water
in pan and bring it to boil. Add cut pieces of raw mango. Boil till it is soft
and cooked. Drain and remove water.(keep this water aside as it will be used
for mango sherbet). It will take about 10-15 minutes to cook.
2. Take a pan and put oil. Add cumin seeds and allow to crackle. Add jaggery and allow to melt. Keep on stirring continuously. Once it is melted, add boiled mango. Add salt, turmeric powder, dhania powder and chilli powder and mix it well. Cook till water gets water gets evaporated. Consistency will be thick in nature.
