Mooli ki bhaji ki sabhji (vegetable made from radish leaves besan) Radish is a very aromatic and flavour packed root vgetable. this is a winter dish. Generally served with Wheat phulka Roti/Bajre ki roti. Ingredients:  Radish leaves 100gm (remove big stems) Radish 1 small one oil 2 tablesoon mustard seeds 1 teaspoonful turmeric powder 1 teaspoonful chilli powder 1 teaspoonful dhaniya powder 1 teaspoonful salt to taste hing pinch besan 1 cup water as needed Steps : Wash radish and leaves properly. Fine chop leaves. Cut radish in small pieces or grate with a big grater. Mix besan with all spieces and oil. Keep it aside for 10-15 minutes. Take oil in pan, add mustard seeds, hing and allow to crackle. add chopped radish and saute for 5 minutes. Add chopped leaves, water and cover to cook. Let it cook with steam for 10 minutes. Mix once inbetween. Now add besan mix gradually and mix well to avoid lump. add water to adjut the consistency. Cook for 5 more minutes. Serve hot. One can add pinch

  J aamfal nu shaak (Guava nu shaak) This sweet and tangy vegetable is one of my favourites made from fruit. It is a winter speciality as guava are available in winter. Generally  it is eaten with dhebra or roti. It is rich in vitamin C, A and fibre along with potassium. Guava icecream, Guava juice and raw guava with sprinkled chilli powder and salt are some yummy dishes made from Guava. Ingredients: Guava-ripe 3-4 (250-300gm) Chilli powder 2 teaspoonful Turmeric powder ½   teaspoonful Dhaniya powder 1 teaspoonful Hing pinch Green chilli 1 chopped Cumin seed 1 teaspoonful Salt as per taste Sugar/jaggery- 1 tablespoon Oil 2 tablespoon Coriander to garnish   Steps: Wash guava, cut and remove seeds.n No w cut into equal small pieces about 1 inch each. Make sure to take guava which is firm in consistency. Take a pan, put oil, add cumin seeds, let it crackle, add pinch of hing, now add pieces of guava. Add half a cup of water. Add green chilli. Let it cook

gajar no halvo (Carrot Halva)

Gajar Ka Halva  The word halva comes from the Arabic word for sweet and it means desserts which are cooked with ghee and sugar like moong dal halva,  rava sheera, beetroot halva etc. Gajar Ka Halva is a North Indian delicacy made during winters. it is made from grated red carrot (desi indian carrot), milk, ghee and sugar. One can also use mava(Milk Khoya in place of milk). Ingredients Red carrot-600-700gm(8-9 medium size ) Milk-4 cups with full fat Sugar 10-12 table spoon Desi cow ghee 4 table spoon Grated dry fruit and cardamom(optional) for garnishing Steps: Rinse and peel carrots.While grating carrot make sure to avoid grating center yellow part. Take heavy bottom pan, turn of the heat and put all grated carrot. Add milk and stir continously. Keep gas on low-medium flame. Mik will begin  to froth. Scrape side of the pan from time to time. Cook till mixture is reduced to 75%. Now add ghee.Mix well. Add Sugar to it. By this time all water part will be evaporated. Mix well. Add pinch o
