Muthiya

Muthiya are steamed healthy Gujarati snacks. It can be eaten in breakfast, lunch, and evening as a tea time snack also.

Ingredients:

wheat flour-100gm

dhokla flour-50gm

bottle gourd-250gm

curd 3-4 tablespoon

sugar1 teaspoon

salt as per taste

hing pinched  

1 lemon squeezed

fresh ginger-chilli paste 1/2 teaspoon(add more chilli if you like spicy food)

turmeric powder-1/2 teaspoon

chilli powder 1 teaspoon

fruit salt 1 teaspoon

oil 2 tablespoon to temper

mustard seeds 1 teaspoon

sesame seeds 1 tablespoon

to garnish-coriander and grated coconut

Steps:

Wash, peel and grate bottle gourd. press and remove juice. keep it aside.

Mix both flour and add grated bottle gourd to it. add all the spices except mustard seeds and sessame seeds. Add sugar, salt, fruit salt and curd also. Mix well and prepare a soft dough like consistency. Cover it for 10-15 minutes. make rolls.

Take dhokla cooker(if you dont have,take a deep pan, fill with water, cover with a dish with a holes). Let water boil. Keep rolls at some distance.Cover the pan properly in such a way, rolls are cooked with the steam.Allow to steam for 15-20 minutes. check with toothpick if its done or not.(if toothpick comes clean after poking the muthiya, its done).allow to cool. cut into small round pieces.

take a pan, put oil and heat it,put hing, mustard seeds, allow to crackle. add sessame seeds, allow to crackle. Add muthiya in the pan and allow to cook for some time.(ifyou like little bit crispy, cook till it becomes little bit brown). garnish with chopped coriander and grated fresh coconut. Serve with green chutney.Serve hot. Squeeze lemon before serving.

Variation: 

We can make muthiya from fenugreek leaves, cabbage, palak. even mixtue of 2 like palak and feenugreek leaves also tastes yummy. 

one can add ragi or jav or juvar flour also.
