Bataka ringan na ravaiya-Stuffed Potato-Brinjal-onion

 

This is a traditional Gujarati vegetable. It is easy to cook. It tastes very yummy.

Ingredients:

5-6 green brinjal

5-6 medium sized potato

2-3 Medium sized onion (optional)

2-3 Medium sized tomato 

For stuffing:

besan 3 spoon

cumin-dhaniya powder 11/2 teaspoon

red chilli powder 1 teaspoon

desicated coconut 1 teaspoon

Turmeric powder 1/2 teaspoon

groundnut oil 2 teaspoon

sugar 1 teaspoon(as per taste-optional if you dont like sweetness)

garam masala 1/2 teaspoon

coriander 1/2 cup

crushed peanut 1/2 cup ?can use sesame seeds in place of peanut

salt as per taste

For tempering

Oil 1 teaspoon

Hing pinch

Mustard seeds

2-3 cups of water

Garlic 2-3 pieces-crushed (optional_

Method

Wash and peel onion outer skin and potato. Make 4 slit in plus (+) in Potato, onion and brinjal in such a way that it is joined at 1 end.

Mix all stuffing masala. Stuff all 3 vegetable one by one. Take pressure cooker, heat oil add mustard seeds, hing to temper. on crackling sound, add stuffed vegetable. Add remaining masala and water. Cover the lid and cook for 3 whistle. Check with toothpick by poking the potato. If not properly cooked, cook for another 2 whistle. Garnish with coriander and serve with Roti or Paratha.

tomato also can be stuffed and cooked along with these vegetables. Garlic can be added for taste if you like it. 

Variation:

for stuffing an option of green peas or tuvar dana(cow peas) also can be used. This masala needs to be sautéed well before stuffing. Use sesame seeds in place of peanut in this stuffing.
