Handvo

This is mummy special handvo. I like this  version only. There are so many different versions to make but mumma's handvo is too flavourful, crunchy, 1 pot meal. This is a healthy gujarati snack which can be a whole meals also. It requires some planning before making.

Ingredients

Handvo Flour is readily available-250mg

For home made version(rice 3 part, 1 part dal(mix urad dal, chana dal, tuvar dal, moong dal together).

sesame seeds 1 tablespoon

cashew 8-10 pieces

finely chopped coriander 2 tablet spoon

green chilli 3-4 finely chopped

curry leaves 1 stem

ginger 1 small piece grated

red chilli powder 1-2 teaspoon

hing  1/2 teaspoon

turmeric powder  1/2 teaspoon

bottle gourd 1 cup-grated

corn 1/2 cup

peanut 1/2 cup

salt as per taste

jaggery 1 table spoon

mustard seeds 1/2 teaspoon

fruit salt 1 teaspoon

oil 1 tablespoon

Method

Wash and soak dal and rice separately for 3-4 hours as per suggested quantity.  Remove water and crush to make a coarse mixture in mixer grinder. Batter will be thick in consistency. Transfer to a bowl and add buttermilk and let it rest for 6-8 hours to ferment. Once batter is fermented well, whisk in 1 direction to make it fluffy. 

Take oil in a small pan for tempering. Add mustard seeds, hing, curry leaves and add in batter. Add  jaggery, salt, turmeric powder, green chilli, ginger(finely chopped), red chilli powder and mix. Add grated bottle gourd(make sure to remove excess water from grated bottle gourd), fresh corn and peanuts. Your batter is ready to cook.

Take handva cooker(in case you dont have, you can make in a nonstick pan also). 

For hando cooker-

take sand in sand container and put on gas at a low flame. Now apply oil on the inner surface of cooker. Pour batter evenly. Now sprinkle sesame seeds all over, add broken pieces of cashew, finely chopped coriander leaves, red chilli. Cover the top and cook on low flame for about 30 minutes. check in-between. Check with toothpick-poke with toothpick if done handvo will not stick to the tooth pick. Serve with green chutney. The bottom most crust is very yummy. don't miss to eat it.

Optional to add sweet mango pickle masala to make it more flavourful. Garlic can also be added.

If handvo cooker is not available. Use nonstick pan. Add 1 spoon oil and pour the batter to make a thick layer. Cover and let it cook. Once it is done from the bottom, flip to other side and let it cook. once done, cut into pieces and serve with green chutney. It will make 2-3 pieces  of handvo in non stick pan(from this quantity)
