Dhebra-dudhi/methi/cabbage/carrot/palak/green peas/potato/corn
Dhebra is a quick to make from various vegetables available. It is tasty too. It can be a part of morning breakfast or light evening dinner also. It is a healthy and tasty too. One can use any combination of flour and any combination of veggies too.
Dudhi na dhebra:
Ingredients:
wheat flour 2 cup
bajri/jav, juwar flour 1/2 cup
besan-1/4 cup
salt as per taste
sugar as per taste
green chilli-ginger paste 1 teaspoon
garlic paste(optional) 1 teaspoon
curd 1 cup
sessame seeds-2-3 teaspoon
turmeric powder-1 teaspoon
oil for dough and cooking
vegetables-grated bottle gourd, finely chopped cabbage, grated carrot, finely chopped palak, methi, green peas (crushed), corn-(crushed), aloo boiled and grated. 2 cups
Method:
Wash, peel and grate bottle gourd. Add pinch of salt and mix well. Keep it aside for 5-10 minutes. Press with hand and remove juice from it.
Take wheat flour. One can add any millet flour of choice. Also add besan. Add grated bottle gourd, finely chopped coriander, sugar, salt, turmeric, sessame seeds. Mix all dry ingredients. Add oil, ginger- chilli paste, garlic(opitonal). Add curd and make a dough. If required add water.
Divide dough in equal balls. Roll gently with the help of rolling pin and use flour to roll it nicely. Make 5-6 inch round dhebra.
Take a tavi(nonstick or caste iron) and heat it. Put oil and dhebra. Turn on other side when there are small bubbles. Put oil and cook till it is golden brown on both side on low-medium flame. Dont cook on high flame else it will turn black. Make all dhebra in this manner.
One can eat dhebra with pickle(chundo), aloo ki sabji, curd etc. It can be eatern with cheese, jam in tiffin box also.
