 Upma

it is a popular South Indian breakfast made from Rava(suji-Semolina) and vegetables. However now a day upma is also made from Ragi, Juwar, and Quinoa. 

This dish is full of flavours and tastes delicious. It is quick and easy to make.

Ingredients: 

Roasted rava(it is the key thing to roast rava).

1 finely chopped onion

1-2 finely chopped green chilli-as per spicy food you like

1/2 inch ginger grated

8-10 curry leaves

10-112 broken pieces of cashew

mustard seeds 1/2 spoon

hing-pinch

salt as per taste

sugar 1 teaspoon

1 teaspoon urad dal

1 teaspoon chana dal

oil-2 teaspoon for roasting rava

2 teaspoon ghee

Vegetables-finely chopped- french beans, carrot, green peas (steam boil), green capsicum finely chopped

coriander to garnish

freshly grated coconut to garnish

Method:

Take oil in a pan and roast rava till it becomes fragrant. Make sure it does not turn brown in colour. Allow it to cool in a plate.

Take ghee in the same pan and heat it. Add mustard seeds, hing, curry leaves, green chilli, ginger and saute them. Add urad daal, and chana daal and fry them till it become golden brown in colour. Add cashew to fry too. Add onion and saute till it becomes translucent. No add water and heat it. Add salt and vegetables to cook.  Once vegetables are tender, add rava. Mix evenly. Adjust consistency by adding water.  add 1 teaspoon of sugar to add (optional). Once sooji is cooked well it becomes soft. Upma should be of a porridge consistency. Garnish with coriander and freshly grated coconut. Serve hot with coconut chutney.

Similar manner idli rava, juvar upma, ragi upma as well as quinoa upma can be made. 

For this Ragi upma - make sure to soak for 2 hours before cooking them. This can be served with gunpowder. 

Millet upma is gluten-free and nutritious.  Ragi rava is also available. Ragi can be roasted and crushed to make rava. Turmeric powder and lemon juice are to be added to this upma.

Juvar upma needs cooking in a pressure cooker.  Whole grain juvar (3/4th cup) has many health benefits. Soak it for 8-10 hours after rinsing it with water properly for 2-3 times and drain that water. Pressure cook with 1 cup of water adding turmeric powder. Cook for 3 whistles. Once cooked, other steps as same as rava upma. Even Juvar rava is available.

Quinoa upma is a complete meal served with curd and gunpowder as well as pickle. It is gluten-free,  rich in iron and protein. It is easy to cook.  It is a one-pot meal. It can be cooked in a pressure cooker or cooked with boiling water. The rest of the steps are like rava upma only.
