Vegetable Frankie
It is an Indian Burrito. It is one of the most loved Indian street food. It is made from
whole wheat roti, layered with potato roll, chopped veggies like onion, tomato,
grated cheese, green mint chutney and tomato ketchup with Frankie masala/chat
masala.
It is easy to make and tastes yummy. This is my daughter’s favourite when made as per my mother’s recipe.
Ingredients:
For dough:
Wheat flour
2 cups
Oil to
knead the dough
Salt to
taste
For Frankie stuffing
Boiled,
grated potato 2 cups
Frankie
masala 1 teaspoon
Butter 2-3
teaspoon
Chilli
powder ½ teaspoon
Turmeric
powder ¼ teaspoon
Dry mango
powder ½ teaspoon
Grated
Cheese/paneer ½ cup
Chopped
onion, tomato ½ cup
Chopped
lettuce ½ cup
Grated
carrot ½ cup
Salt as per
taste
Ginger-small
pice
Garlic-1-2
clove
Roasted
cumin powder -1/4 teaspoon
Lemon juice 1
Method:
Prepare
dough from wheat flour for roti. It is a soft dough. Cover and keep it aside
for 15-20 minutes. Knead again and divide balls. Roll and make thin chapatti of
8-10 inch diameter. Use dry flour while rolling. Heat tava on medium flame. Put
roti once you see few bubbles, flip to another side. Cook roti partially and
keep it covered in a muslin cloth to keep it soft.
Stuffing:
Take boiled
potato, peel skin and mash them. Add finely chopped onion, chopped garlic. Now
take oil and add ginger, garlic paste and saute.(garlic is optional).Add finely
chopped onion and saute. Add cabbage, capsicum, carrot, lettuce and saute them
(optional). Add dry mango powder, chilli powder, turmeric powder, garam masala
and roasted cumin powder and mix well. Turn off the head and add boiled mashed
potato and mix well. Squeeze lemon juice and mix again. Taste and adjust spices
as needed. Make rolls and shallow fry on medium heat. (one can roll in bread
crumps before shallow fry also).
Take tava,
put butter and put partially cooked roti, cook on one side and flip it. Take
off the heat, apply green chutney, tomato ketchup, chopped onion, carrot,
tomato, Frankie masala. Keep potato roll over it, add grated cheese over it.
Wrap it and serve with ketchup/chutney or sour cream.
Variations/Options:
Egg Frankie, Frankie with mayo, sriracha sauce
instead of ketchup and green chutney.
Option of adding grated paneer instead of
cheese is also a nice option.
