Laccha Paratha
Laccha paratha is a layered flat bread made from wheat flour. This method is mummy's special paratha. In fact she used to make it for her granddaughter.
However, there are many variations that one can try. Adding cheese, coriander-chilli, chilli flakes and oregano, periperi masala, garlic and coriander, black and white sesame seeds, etc., the method of making will remain the same.
Even ragi flour, barley flour, and oats flour can be used instead of wheat flour.
Ingredients:
Wheat flour 1 cup
ghee 4 tablespoon
salt as per taste
water as needed
herbs and spices as needed and choice
Method:
Prepare the dough by adding salt and mix in wheat flour. Add water to make a soft dough. Keep aside covered for 10 minutes. Knead the dough again and divide it into equal balls. Roll into a big circle. Apply ghee all over and sprinkle wheat flour. (use a brush or hand to apply ghee). Make sure to apply properly, or else layers will not be formed. Make sure to roll the roti as thin as you can. Now make pleats. More thin and more pleats, you will get more layers. After it is fully done, make a coil to make a flat round. Now roll it carefully with light hand with rolling pin.
Heat tawa and put oil/ghee/butter(of ur choice). Cook paratha on medium flame. drizzle oil on both side until golden brown. Use spatula for even cooking on both sides. Once done, pat it to open up the layers. Again apply ghee over it and serve with curry, dal, curd or pickle.
