Spinach rice
Palak rice, also known as Spinach rice is a healthy dish made with spinach puree, rice, onions, spices and herbs. This delightful recipe is a nutritious meal rich in iron and fibre. it can be served with salad, pickle or raita. It is easy to make and tastes delicious.
It can be cooked in pressure cooker, pan or in the Instant pot. Spices can be adjusted according to your taste. Veggies can be added as per taste.
Ingredients:
Spinach 1 bunch
Basmati rice 1 cup-rinsed and soaked
Veggies of your choice(carrot, potato, french beans, cauliflower) 1 cup finely chopped and washed
Green chili 1-3
onion -1 medium sized finely sliced
garlic 3-4 piece
ginger 1 inch
tamal patra 1
cinnamon 1 inch
cardamom 2-3 (optional)
salt as per taste
cumin 1 teaspoon
clove 2-3
butter/ oil 2-3 tabespoon
coriander to garnish
To serve: raita, pickle, papad
Method:
Rinse 1 cup of basmati rice till the water runs clear of starch. Then soak the rice in enough water for 20 to 30 minutes. Later drain the water and keep the soaked rice aside for 30 minutes.
Making Spinach Puree
Rinse the spinach leaves with water a few times. Then drain all the water and roughly chop them. You will need 3 cups of roughly chopped spinach.
Now add the spinach leaves into a mixer jar. Add 1 to 3 green chilies (as per spicy rice you like), 1 inch ginger and 3 to 4 garlic cloves. Blend to a smooth puree. Cover and set aside.
Making Palak Rice
In a pressure cooker, heat 2 tablespoons of oil. Lower the heat and add the spices and saute them till they splutter. Make sure not to burn the spices. (add 1 bay leaf, 3 to 4 cloves, 1 inch cinnamon, 2 green cardamom, 1 teaspoon of cumin seeds. Add ⅓ cup of thinly sliced onions.
Stir and saute the onions on a medium heat till light golden or golden. Stir often so that the onions cook evenly Add veggies of your choice. (finely chopped potato, green peas, chopped carrot, french beans, cauliflower) and sautee the. Add the prepared spinach puree. Stir and saute for 4 to 5 minutes. Add the soaked rice. Stir and gently mix the rice very well. Add salt as required.
Add 1-1/2 cup of water. Mix very well. Add a few drops of lemon juice. Adjust seasoning as needed. Cover and pressure cook for 2 to 3 whistles on a medium heat. Wait for the pressure to drop in the cooker on its own, then remove the lid and gently fluff the rice. Garnish with chopped coriander.
