vegetable biryani

 There are many versions of biryani. This version is made at our home. It is simple and tasty too. It is colourful and full of flavours. It is rich in protein and fibres too. It can be made as a 1 pot meal also.

We generally make a layered biryani.

Ingredients: 

all vegetables about 2 bowls

french beans, carrot, potato, capsicum(optional)- diced into 1 inch pieces, corn, green peas, cauliflower small florets

onion, finely chopped 1 medium sized

garlic 1-2 clove grated

coriander for garnishing 1/2 cup

green chilli 1-2

ginger-1 small piece grated

tomato 3 pieces finely chopped

cashew 8-10 

paneer diced 1 inch-100gm

Ghee 2 tablespoon

Oil/ butter 2-3 tablespoon

dhania powder 1 teaspoon

turmeric powder 1/2 teaspoon

Biryani masala(cinnamon stick, cardamom, tamal patra, clove, pepper, roasted cumin)-1/2 teaspoon

salt to taste

Method:

Take oil in a pan and heat it to fry cashew and paneer pieces separately and keep them aside.

Now add chopped onion, tomato, grated ginger,  garlic and finely chopped green chilli. Add some salt and saute them. Once the onion becomes translucent and tomato becomes soft, turn off the flame and allow it to cool. Crush and make a smooth paste. Keep it aside.

Take vegetables of your choice. Chop them into small pieces and sautee them on medium flame till tender and mild golden brown. Add tomato onion paste to these vegetables. Allow to cook for 5-10  minutes on medium flame. Add biryani masala,  turmeric powder, dhania powder, and salt as per taste if required. Add sauteed paneer to this gravy. Allow paneer to marinate on low heat for another 5 minutes. Add cashew to gravy. (keep a few aside for garnishing).

Cook basmati rice. Take ghee in a pan and heat it. Add rice and mix well. 

Now take a glass bowl. make layers-1 layer of rice, followed by vegetables then rice, again vegetables. Top layer to be garnished with cashew and coriander.

This is a 1 whole meal that is time-consuming in today's fast-food world. But once you make it at home, I am sure you are going to love it. Serve it hot with curd or raita(boondi/cucumber/masala dahi).
