Vegetable kofta

 This is mummy special kofta served with home-made naan. It tastes delicious.

Ingredients:

For kofta

bottle gourd 250-300gm

bread crumbs 100gm

besan 3-4 teaspoon

fruit salt 1/2 ENo sahcet

for gravy:

dhani powder 1 teaspoon

coconut-dry desicated 2 teaspoon

red chilli powder 1 teaspoon

turmeric powder 1/2 teaspoon

garam masala 1 teaspoon

tomato puree 2-3 tablespoon

crushed onion 1

sugar (optional) 1 teaspoon

butter 1 tablespoon

ghee 1/2 tablespoon

Cashew paste:

Cashew (801 pieces) , milk 1/4 cup) , fresh cream 1/4 cup

Ginger-chilli paste: green chilli 1, coriander8-10 spring, ginger 1 small piece, salt as per taste, lemon 1 squeeze

Method:

Soak cashew in milk for half an hour and keep it aside.

How to make kofta: 

Peel and grate bottle gourd. Add besan, salt, green chilli paste, pinch of fruit salt. make a dough with soft consistency. make round balls and roll in bread crumps and deep fry. healthier option is to make kofta in paniyarum patra with less oil.

We can add green peas, grated carrot, mashed boiled potatoes.

To give a twist, add blanched and crushed spinach gravy. kofta will be green and tastes also yummy.

How to make gravy:

Crush onion and tomato separately and make paste.(cooking seperately gives unique flavour to the dish.)

Take a pan and heat ghee and butter. Add hing, green chilli paste, onion paste and sautee. Add tomato puree and salt. Mix well. Add turmeric powder, red chilli powder, dhania powder, garam masala, pinch of sugar and dry desiccated coconut. Stir well till gravy is cooked well. Add cashew paste and cook for another 5 minutes.

Just before serving, add kofta to gravy. Enjoy this dish with Naan.
